Hommus Dip
An easy go to recipe and great snack idea if the kids are at home. Serve it up with rice crackers and veggie sticks.
What you will need:
Blitz all ingredients together until smooth. Place in container and refrigerate until ready to serve. Note: The flavours of the garlic and lemon intensify when this dip is chilled. If you are not a garlic fan then leave it out. You can add some moroccan seasoning as an alternative.
- 1 x tin of chickpeas drained
- 1 x clove of garlic
- Juice of 1 lemon
- 1 tablespoon of tahini
- Salt & Pepper for seasoning
- 1 x tablespoon of olive oil
- 1/3 cup of water (you may need more water if mixture is too thick)

LUNCH IDEAS
Ditch the everyday sandwich and get creative with wraps. Fill them with everyday favourites such has chicken or ham, cheese, tomato and baby spinach.
Toast them in a sandwich press and cut into triangles. Get inventive with your fillings and use leftovers as another option.
DINNER MADE EASY - CHICKEN & VEGGIE TRAY BAKE

This is one of those dishes with little fuss. Just grab as many veggies as you like. For this dish I used potato, carrots, zucchini, capsicum & onion.
Start by cooking the veggies that take the longest first. (Fan forced oven@ 200) Cut the chicken into 5cm wide pieces. For this recipe the chicken is coated chargrilled capsicum dip but as an alternative you can also use a pesto of choice. After about 20 minutes add the remaining veggies and top with the chicken and bake for a further 20 minutes. Cooking times may vary depending on your oven and quantity in the tray. Always check and test that your food is cooked! Serve when ready and enjoy.
